This venison heart poke bowl is the best raw wild game recipe I’ve made, and it’s not even close.

All three of my favorite deer heart recipes happen to be raw. This venison heart poke takes the top spot. If you like a tuna poke bowl, trust me on this one and give it a shot.

You can use other whole muscle cuts from ungulates for wild game poke, but the heart has the perfect texture for this deer heart poke bowl.

Ingredients

Grab these ingredients to whip up a delicious venison heart poke bowl.

      The Poke Sauce

      • 2 Tbsp. soy sauce
      • 1 Tbsp. rice vinegar
      • 1/2 Tbsp. oyster sauce
      • 1 tsp. toasted sesame oil
      • 1 clove garlic, minced with a clean, sharp knife

      The Deer Heart Poke Bowl

      • 2/3 cup heart, cleaned, trimmed, and diced into 1/3-inch cubes
      • 1 cup cooled basmati rice
      • 10–15 thinly sliced fresh jalapeño rings
      • 1/2 avocado, diced
      • 1/3 cup diced fresh mango
      • 1/4 cup edamame
      • Toasted sesame seeds and spicy mayo for garnish

      Directions

I put this deer heart poke bowl together in three steps.

Clean and Dice the Venison Heart

          1. Use a sharp kitchen knife to trim all connective tissue, valves, and silver skin from the heart. Dice the cleaned heart into uniform 1/3-inch cubes.

Toss the Heart in the Poke Sauce

          1. Combine the soy sauce, rice vinegar, oyster sauce, sesame oil, and minced garlic in a small bowl. Toss in the diced heart and stir until every piece is coated. Place the bowl in the fridge as you prep the other ingredients.

Build the Deer Heart Poke Bowl

          1. Place the cooled basmati rice in a bowl. Spoon the marinated heart and a couple of spoonfuls of the sauce over the rice.
          2. Add the jalapeño rings, diced avocado, fresh mango, and edamame around the bowl. Garnish with toasted sesame seeds and a drizzle of spicy mayo.
